Sautéed Oysters in Black Bean Sauce

Ingredients
Small oyster1 lb (450g)
All-purpose1 Tbs
Corn starch1 Tbs
Scallion (diced/separate green from white part)2 stalk
Black bean sauce1 portion

Instructions
1.Prepare the Black Bean Sauce.
2.Gently mix the oysters with 1 tbs. of flour in a strainer. Rinse the oysters then drain the water.
3.Gently mix the oysters with 1 tbs. of corn starch.
4.Boil 4 cups of water. Blanch the coated oysters in the boiling water for 1 minute. Drain the water and set the oysters aside.
5.Place the part A from the Black Bean Sauce and scallion (white part) in a heated pan; sauté until aromatic.
6.Add the par B from the Black Bean Sauce; bring the sauce to a boil. Add the oysters and sauté until the sauce is thick. Mix in the diced scallions (green part).

中筋麵粉1 大匙
太白粉1 大匙
蔥 (切粒/蔥白蔥綠分開)2

做法
1.準備豆豉醬汁
2.牡蠣放在濾網內與1大匙麵粉輕輕拌勻,用水沖洗乾淨後濾乾。
3.將牡蠣與1大匙太白粉拌勻。
4.燒滾4杯水。加入裹粉的生蠔燙1分鐘後撈出放在一旁。
5.炒鍋燒熱後加入豆豉醬汁A料和蔥白爆香。
6.加入豆豉醬汁B料煮滾後加入牡蠣,快炒至醬汁粘稠。起鍋前拌入蔥綠。
